Triple chocolate cake recipe




* Ingredients & Methods : 

First, in a mixing bowl, whisk together the egg yolks, sugar, oil, salt, and milk until well combined. Using a fine-mesh strainer, sift the all-purpose flour and cocoa powder into a mixing bowl, and whisk together.

In a separate mixing bowl, whisk the egg whites and cream of tartar until light and frothy. Add the powdered sugar and whisk until stiff. Add 1 tablespoon of the egg white mixture to the chocolate egg yolk mixture.

Add to lighten the chocolate mixture. Continue adding the egg whites to the chocolate mixture, folding in just to incorporate. Pour the cake mixture into a round mold covered with parchment paper and bake for 55 minutes

Let the cake cool completely, then remove it from the cake pan and cut the cake into four thin circles.

In a glass bowl, mix the chopped dark chocolate with the hot cream for the chocolate ganache filling. Mixing to chocolate is completely melt and set aside.

In a separate glass bowl, mix the white chocolate with the warm cream to make the white chocolate ganache.

To collect the chocolate cake
Put one layer of cake on a plate. We paint it with milk, then a layer of chocolate ganache filling.

Put the next layer of chocolate cake on top, brushing it with the milk and white chocolate ganache filling. Repeat with remaining filling and cake
In a glass mixing bowl, make whipping cream with the remaining heavy cream and an electric mixer.

Spread the whipped cream over the assembled 3-layer chocolate cake. When the cake cools completely for an hour.

In a small saucepan, melt the sugar, butter and milk chocolate to obtain a chocolate glaze. Pour warm glaze on cooled triple chocolate cake. Smooth it out, press chocolate chips into side of cake for decoration.
